The holidays are approaching and the last thing I’d thought to find in Sweden were fresh cranberries. So, when I saw them at Paradiset the other day, the American in me just HAD to buy them. I knew I was going to make something saucy with them (hehe not THAT kind of saucy, but they are a little sassy wouldn’t you say?) but I didn’t want a never ending bowl of cranberry sauce in the refrigerator. That’s when these cranberry sauce gummies were born. It’s the perfect way to use leftover cranberry sauce!

If you are prone to digestive disorders, cranberries are the berry for you. These mighty berries can stop ulcer forming bacteria from attaching to your stomach lining! Wow! If you ask me, that is one SUPER berry!
GOOD QUALITY BEEF GELATIN
The secret to forming these gut healing, gummy delights is a good quality of beef gelatin. Make sure the gelatin you are using is organic and pasture raised to get all the healing benefits. You want happy beef gelatin, not sad beef gelatin!
In this cranberry candy recipe, I used Vital Proteins Beef Gelatin (the one in the green canister). It is my absolute favorite! I also use it every morning in my coffee and matcha! It makes my skin glow and my tummy happy 🙂
My oh my was this a tough one to get the hang of! I never realized that tempering made the difference between “chocolate that melts with the slightest touch of your finger” to “chocolate that can sit out in room temperature, in your hand, and still not melt” I am still learning the ways of tempering, but with the help of Melting Minutes’ amazing chocolate academy tutorials, I think I finally got the tempering down. I like to use the stove top because

C. I don’t have a KitchenAid or fancy marble slab

The key to tempering, however, is a trusty thermometer. With Mr. Thermometer in hand, you can temper like a wizard…If wizards temper that is 😉
